Little Lasagna

Mini Spinach Lasagna Hor dourves

This is a brilliant and most importantly a delicious recipe!  I love that there is no plate necessary and they are the perfect bite size appetizer for parties.  It has all the taste, but none of the mess.

What You Need

  • 8 cooked lasagna noodles
  • 1 package of frozen spinach
  • 1 container of ricotta
  • 1/2 cup parmesan cheese
  • 1 egg
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon italian spices
  • s&p to taste
  • 1 can of pizza sauce
  • 1 cup shredded mozzarella

Directions

  1. Preheat oven: 350 
  2. chop spinach + mince garlic
  3. Combine in bowl spinach + ricotta + parmesan + egg + garlic + italian seasonings + s & p
  4. cut cooked noodles in half width-wise
  5. lay noodles on wax paper
  6. spread 3 tablespoons of spinach mix onto the noodles (make sure to leave edges empty)
  7. roll the lasagna noodles
  8. place a dab of pizza sauce on top of each roll
  9. sprinkle shredded mozzarella onto of each roll
  10. cover baking sheet with foil
  11. cook for 20 minutes or until cheese is melted
